Harvest White Bean Soup

 

 

This soup is scrumptiously delicious and nurturing.  It’s great on a cold day for some healthy comfort.  The ingredients are simple and wholesome.  Enjoy this on its own or as an accompaniment to a main dish for extra nourishment.

 

  • 1 cup of White Bean

  • 1 Onion chopped

  • 1 Carrot finely sliced

  • 1 sprig of Green onion

  • 1 tbsp of Rosemary

  • 1 tbsp of Thyme

  • 2 tbsp of Olive Oil

  • 1 cube of Organic Vegetable Bouillon

  • 3 cups of Water

 

Put the chopped onion in a soup pot and add 2 tbsp of olive oil and sauté lightly.  Add 1 tbsp of rosemary and thyme.  When lightly sautéed add three cups of water, add the finely sliced carrots, bouillon and white beans and bring to a boil. Let simmer for 10 on medium and bring down to low heat to simmer for another 5 minutes. Get ready to serve and enjoy!
