Avocado, Beet & Pepper Salad with Black Sesame Dressing

 

 

This salad is very colourful and full of antioxidants.  It makes for a wonderful side salad, and pairs nicely with beef or chicken.  It also makes a lovely meal salad and pairs well with herb foccacio bread. It is tasty a packs a bite of flavour.  The key to maximizing the presentation of this salad is to uniform the slicing of the veggies by trying to match them to a similar size.

 

  • 1 Avocado sliced

  • 2 Beet sliced into matchstick size

  • 1 Red Pepper Sliced

  • 1 Orange Pepper Sliced

  • 1 Spaghetti Sliced Carrot

  • 1 Green onion chopped

 

Dressing:

 

  • 1 tbsp Olive Oil

  • 1 tbsp of Black Sesame seeds

  • 1 teaspoon of Himalayan Sea Salt

 

 

Slice and dice the peppers with love. Slice the carrots with a grater making long spaghetti like strips, and cut them into equal lengths of the pepper. Chopped the beets carefully with patience because as you know they can be quite messy but they are full of nutritional goodness, so let this be your mantra while you prepare these messy delicious nutritionally packed veggies.

 

Mix-up the ingredients for the dressing in a small bowl.  Put the peppers, beets and carrots together in a bowl and mix in half of the salad dressing. Place the salad on the serving plate and top with sliced avocado, chopped green onion and drizzle with the remaining black sesame dressing.  Enjoy!
