Minestrone Lentil Soup


This is a spin on Minestrone, especially if you are a lentil lover.  It can be difficult to incorporate this nutritious food into delicious recipes.  This recipe contains over 12 grams of fibre and 14 grams of protein plus a chock-full of other nutrients. 



  • 1 ½ cup of lentils (canned)

  • 1 cup of diced tomatoes 

  • ½ cup of chopped carrots 

  • ½ cup of diced onions

  • 2 tbsp of chopped parsley 




  • 2 tbsp of Tomato Paste 

  • 1 cube of Organic Veggie Bouillon

  • 1 tbsp of Olive Oil

  • 1 teaspoon of Sea Salt 




  • 1 dollop of yoghurt

  • 1 teaspoon of sundried tomatoes flakes



Saute onions in a pan with a tablespoon of olive oil, add 3 cups of hot water and boil.  Add chopped carrots and let boil for 5 minutes.  Turn heat to medium heat. Add tomato paste, organic bouillon, stir and let simmer.  Add diced tomatoes and lentils stir gently and then continue to let simmer for 5-8 minutes.  Finally, add parsley and a sprinkle of sea salt. Turn heat to low.  Ready to serve.  Pour in a bowl and add a dollop of yoghurt, spiralized carrots or parsley for garnish and if you can find it some sundried tomato flakes. Delicioso!
