Beet, Blood Orange & Gorgonzola Salad



This is a colourful and scrumptiously delicious salad.  It can be a good side dish to a main course, a palate cleanser, or a delicious healthy lunch or dinner.  It makes for a wonderful salad to entertain with because of its beautiful colour and intricate flavours. 


 It is full of vitamin C, vitamin A, calcium. It has cleansing properties from one of my favourite ingredients-beets. The dressing is simple because the other ingredients have so much flavour and the fresh dill adds an extra bite. 




  • 2 medium-sized beets finely sliced

  • 1 medium blood orange peeled and sliced

  • 1/2 cup of crumbled gorgonzola

  • 1 medium spiralized carrot 

  • 2 tbsp of green onion 

  • 2 tbsp of fresh dill


2 tbsp of olive Oil
1 teaspoon of sea salt 



Clean and finely slice you beets and blood orange.  Use a carrot peeler to spiralize your carrots into long spaghetti strands. 

I like to assemble this salad like carpaccio.  Lay out the beets first on the plate, then the sliced blood oranges. Top with crumbled Gorgonzola cheese, top with sliced spiralized carrots, dill and green onion.  Drizzle with dressing.
