Avocado & Mango Salad

This salad pulls fresh ingredients together to create a salad with a wonderful texture and intricate flavour combination. Each bite will keep you guessing. It is also a very versatile salad to eat as a meal. You can add breaded shrimp, chicken or cashews to give it an extra kick of protein and girth to eat like a meal. It also is very colourful and aesthetically pleasing when assembled.

  • 1 Zucchini Spaghetti sliced

  • 1 Carrot Spaghetti Sliced

  • 1 Avocado Sliced

  • 1 Mango Sliced

  • 2 tbsp of Chopped Cilantro


  • Add 4 oz shrimp, 4 oz of chicken


  • Add ½ cup of cashews


  • 1 tbsp Olive Oil

  • 1 tbsp of Black Sesame seeds

  • 1 teaspoon of Himalayan Sea Salt

Spaghetti slice the carrots and zucchini and cut in half strips. Slice the mango and avocado. Chop the cilantro for garnish. Prepare the salad dressing. Mix-up the ingredients for the dressing in a small bowl. Assemble the salad by taking the spaghetti sliced zucchini and carrot and placing it a bowl. Mix with half the salad dressing. Place on a serving plate and top with the mangoes, avocados and garnish with the cilantro. Add some shrimp, chicken or cashews on top for extra bite and flavour and enjoy!
