Lavender Shortbreads


This Lavender shortbread recipe is delightful. Perfect for a special treat! Adding Lavender creates a unique culinary experience. These cookies pack a floral flavor. They might not resonate with everyone’s palette, but for those who enjoy them, really love them. This recipe is also gluten free.

Ingredients:

1/cup of coconut flour

1 ½ cup of rice flour

1 cup of sugar

1 tbsp of Lavender

¾ cup of butter

3 tbsp of water

Directions:

Mix together coconut flour, rice flour and sugar in a mixing bowl. Mix thoroughly. Add lavender flakes and mix in. Take ¾ cup butter and put under heat source until softened. Add the softened butter to the mixture and fold until the mixture becomes dough. Add water if needed to firm the dough.

Roll the dough out on a cutting board or surface you can work on. Roll the dough into circular roll. I like to use foil to help shape the dough. The dough is good to wrap and put in the freezer for later, or you can cut the dough into ¾ inch slices from the circular roll.

Heat the oven to 350 degrees

When ready lightly grease a pan using butter and place your cookies on the pan in the oven. Bake for 15-20 minutes until lightly browned. Let cool.

Take out of the oven and sprinkle with sugar.
