This recipe is yummy and chalk full of Vitamin E and antioxidants. It is refreshing and great on its own as a snack or as a topping. I like to use this as a topping for quesadillas, and if you enjoy fish, it also makes a great addition as a topping to white fish or salmon. It’s a very simple and delish dish!
1 full Avocado cut in cubes
1 Red Pepper diced
¼ cup of Red Onion finely diced
1 tbsp Olive Oil
1 tbsp of Black Sesame seeds
1 teaspoon of Himalayan Sea Salt
Cut avocado, red pepper and red onion and mix. Mix-up the ingredients for the dressing in a small bowl or ramekin- olive oil, sesame and sea salt; drizzle over the avocado, red pepper and red onion. It’s so simple and presto-ready to serve.
Serve in a small bowl with Rice chips or tortilla chips, or also recommended over quesadilla, white fish and salmon. I like to serve this delish dish with Lundberg Gluten-Free Rice Chips! Enjoy!
